Ask any espresso enthusiast about group heads and the conversation quickly lands on two names: the classic E61 and the modern saturated group head. Both produce exceptional espresso. But they achieve temperature stability in fundamentally different ways — and the difference shapes how your machine behaves on a busy bar.

How the E61 Group Head Works

Designed in 1961 (hence the name), the E61 uses a thermosiphon system: hot water from the boiler circulates continuously through the group head via natural convection. This passive circulation keeps the group warm and stable without any active electronics.

Its signature features include:

  • A large brass body with excellent heat retention
  • Pre-infusion — water gradually saturates the puck before full pressure, reducing channeling and improving flavor
  • Legendary durability and serviceability; parts are standardized worldwide

The E61 is the most trusted group head in specialty coffee, and for good reason: when well-maintained, it produces beautifully even extractions with remarkable repeatability.

How a Saturated Group Head Works

A saturated group head is machined as part of — or directly bolted into — the boiler, so the group is bathed in boiler water at all times. Thermal mass is enormous and temperature recovery after each shot is almost instant.

  • Near-perfect temperature consistency, even under continuous back-to-back shots
  • No heat-up drift: the group is always at brew temperature
  • Ideal for high-volume service where the group never rests

Many modern pro machines pair saturated groups with PID control and a hot-water circulation loop, giving baristas adjustable temperature with saturated stability — the best of both worlds.

Which Should You Choose?

Choose an E61 if your identity is craft: you want the classic silhouette, the ritual, and a machine your barista can grow with for years. Choose a saturated group if your priority is relentless consistency during rush hours — 300 shots, same cup, every time.

And if you cannot decide: several of our double-group machines ship in either configuration, so you can let your actual service patterns decide later. Browse our E61 and saturated series — or ask us directly.
